To prepare a delicious baked potato recipe, start by choosing quality potatoes, preferably those suitable for mashing or frying, which have a high starch content. Wash them well under a stream of cold water, then cut them into thin slices, about 5 mm thick. This will ensure even cooking, and the potatoes will become crispy on the outside and soft on the inside.

Arrange the potato slices, as much as possible in a single layer, in a heat-resistant dish or baking tray. It is important that the slices do not overlap, to allow heat to circulate freely and achieve an even browning. After placing the potatoes, generously drizzle them with high-quality olive oil. The oil not only adds a pleasant flavor but also helps achieve that desired crispy crust.

Add fresh lemon juice, which will not only enhance the flavors but also contribute to the crispy texture of the potatoes. Season with salt and pepper to taste, and for an extra flavor boost, sprinkle some finely chopped fresh parsley or oregano over the potatoes. These herbs will add a fresh note to the dish.

Pour water into the tray, being careful to reach only halfway up the height of the potato layer. This step is essential, as the water will help the potatoes cook evenly without drying out.
