To prepare delicious stuffed pork chops, we start by carefully washing the pork loin slices, ensuring they are clean and ready to be stuffed. We also wash the salt-cured capers, raisins, and parsley leaves, taking care to remove any impurities. These ingredients will add a special flavor to the dish.

On a large plate, we place a slice of pork loin and on one side of it, we put a generous portion of grated Parmesan cheese, which will provide an intense and creamy flavor. We then add a few capers for a salty and tangy taste, sweet raisins for a pleasant contrast, toasted pine nuts that add a crunchy texture, and a little finely chopped garlic for an extra aroma. Finally, we sprinkle a bit of freshly chopped parsley, which will add a note of freshness.

After preparing the filling, we carefully start rolling the slices of meat, making sure the filling stays well enclosed. The resulting rolls are tied with kitchen twine to ensure they do not unravel during cooking. Alternatively, we can use toothpicks, but the twine method is safer and guarantees that the chops will remain intact.

Once we have prepared all the chops, we place them in a large pot and add a generous amount of olive oil (we avoid extra virgin oil for this recipe, as it can burn during cooking). We cover the chops with water and let them simmer over medium heat, covered with a lid. It is important to keep the lid on the pot to allow steam to circulate and help the meat become tender.

As the water evaporates, we will notice how the aroma of the chops begins to intensify. When the water is almost completely reduced, we add a few cubes of finely chopped onion, which will bring extra sweetness and flavor. Then, we add the tomato juice obtained from a can of peeled tomatoes, which will create a delicious sauce in which the chops will cook. We let everything simmer, covered, until the sauce thickens and the meat becomes tender, and the flavors blend into a symphony of tastes.

Finally, we remove the chops from the sauce, let them rest for a few minutes, then serve them with the tomato sauce on top, alongside a side of mashed potatoes or a fresh salad. This recipe will not only impress everyone, but it will transform an ordinary meal into a true culinary feast!
