Spinach is a versatile and nutrient-rich ingredient that can transform any dish into a culinary delight. In this recipe, we will enjoy the delicious combination of spinach, potatoes, and speck, a specialty of smoked pork that adds a rich and deep flavor.

We start by washing the spinach very well, making sure to remove any impurities or sand. Then, we put salted water to boil in a large pot. When the water starts to boil, we add the spinach and let it cook for about 5-6 minutes until the leaves become tender and their flavor intensifies. After boiling, we drain the spinach and chop it finely so that it integrates well into the dish.

Meanwhile, we turn our attention to the potatoes. They are peeled and boiled in salted water until they become soft and easy to mash. Once boiled, we drain them and transform them into a creamy puree, adding a little of the water they boiled in to achieve the desired consistency. The potato puree will form the base of our dish and will help create a pleasant contrast between textures.

Now we prepare the heat-resistant glass dish. We grease it with olive oil to prevent sticking and add a tablespoon of breadcrumbs, which will form a delicious crust. We then line the dish with the potato puree, making sure to evenly cover the bottom.

On top of the puree, we place two slices of speck, which can be cut into triangles or left whole, depending on personal preference. Next come two slices of cheese, which will melt and provide a rich flavor. At this point, we add the chopped spinach. Over the spinach, we put the remaining speck and cheese slices, adding a sprinkle of freshly ground pepper and, for extra flavor, a bit of freshly chopped parsley.

The dish is placed in the preheated oven at 180 degrees Celsius and left to bake for 20 minutes. When the dish is ready, it will come out of the oven with a golden and appetizing crust, and the aroma will fill the entire kitchen.
