The cleaned and washed fish is greased (I chose margarine) on the inside and outside and a bay leaf is placed in each fish. The onion is finely chopped and sautéed in a pan with a little oil until it becomes transparent, being careful not to brown it. This will add a delicious taste and a pleasant aroma to the dish. After the onion has sautéed, a well-ripened tomato, diced, is added and left on low heat for a few minutes to combine the flavors.

In another container, a marinade is prepared from lemon juice, salt, pepper, and herbs such as parsley or dill to enhance the flavor of the fish. After the fish has been greased with margarine and filled with bay leaves, the marinade is poured over it and left to marinate for about 30 minutes. This step is essential to allow the flavors to penetrate the meat well, resulting in a tasty dish.

After the fish has marinated, a baking tray is prepared, which is greased with a little oil to prevent sticking. The fish is placed in the tray, and on top, the mixture of onion and tomato can be added, which will provide an additional layer of flavor. For an extra touch of flavor, slices of lemon and a few olives can be added, which will give a Mediterranean note to the dish.

The tray is covered with aluminum foil to retain moisture during baking. It is placed in the preheated oven at 180 degrees Celsius and left to bake for about 25-30 minutes. In the last 10 minutes, the foil is removed to allow the fish to develop a slight golden crust, which will add an attractive appearance to the dish.

Once the fish is ready, it is taken out of the oven and left to rest for a few minutes before serving. It can be accompanied by mashed potatoes or a fresh salad, which will perfectly complete the meal. Enjoy your meal!
