Ingredients
For the layers:
- 250 g flour
- 1 tablespoon cocoa
- 1 whole egg
- 1 teaspoon ammonia or baking powder
- 100 g sugar
- 1 tablespoon lard
- 1 cup warm milk
For the base:
- 5 eggs
- 5 tablespoons sugar
- ½ packet baking powder
- 5 tablespoons flour
For the cream:
- 500 ml milk
- 4 tablespoons semolina
- 200 g butter
- 250 g powdered sugar
- Juice of one lemon (optional)
For the glaze:
- 2 tablespoons water
- 4 tablespoons sugar
- 1 tablespoon cocoa
- 50 g butter (or cooking chocolate)
Preparation
Step 1: Preparing the layers
1. In a large bowl, combine the flour with the lard, egg, cocoa, ammonia (or baking powder), and sugar.
2. Gradually add the warm milk, mixing until you get a homogeneous and easy-to-shape mixture.
3. Knead the dough for a few minutes until it becomes elastic. Divide it into two equal parts.
4. Roll out each part on a floured surface into a thin sheet that fits the bottom of a tray.
5. Place the sheets on greased trays and bake them in a preheated oven at 180°C for about 15 minutes, or until they turn slightly golden. Let them cool.
Step 2: Preparing the base
1. In a bowl, beat the egg yolks with the sugar until completely dissolved.
2. Add the baking powder and flour, mixing well to avoid lumps.
3. In another bowl, beat the egg whites until they become firm and glossy.
4. Gently fold the egg whites into the yolk mixture, mixing with a spatula to maintain the air in the egg whites.
5. Pour the obtained batter into the prepared tray and bake for 20-25 minutes, or until it passes the toothpick test. Let it cool.
Step 3: Preparing the cream
1. In a saucepan, boil the milk and add the semolina, stirring continuously to prevent lumps from forming. Boil until thickened, then let it cool.
2. In a separate bowl, beat the butter with the powdered sugar until fluffy.
3. Add the cooled semolina mixture to the butter cream, mixing well. If desired, add lemon juice for a fresher taste.
Step 4: Assembling the cake
1. Place the first layer on a platter. Pour half of the semolina cream over the layer, spreading evenly.
2. Add the baked base and pour the remaining cream on top. Place the second layer on top and press gently to fix it.
Step 5: Preparing the glaze
1. In a small saucepan, mix the sugar with cocoa and water. Boil the mixture over medium heat, stirring constantly until it thickens slightly.
2. Add the butter and stir until completely melted. Let the glaze cool slightly before pouring it over the cake.
3. Refrigerate the cake for a few hours before cutting, to allow the flavors to combine.
Practical Tips
- Preparing ingredients: Make sure all ingredients are at room temperature, especially eggs and butter, to achieve a uniform texture.
- Additional flavors: If you want to add a hint of flavor, try adding a few drops of vanilla essence to the semolina cream.
- Variations: To add a splash of fruit, you can sprinkle some pieces of fruit (e.g., cherries or peaches) between the creams and layers.
- Serving: Television Cake pairs wonderfully with fruit tea or flavored coffee, making it perfect for special occasions or simply to indulge after a long day.
