1. Preparing the dough: In a large bowl, combine the flour, sugar, baking powder, and salt. Mix the dry ingredients well with a spatula or fork to ensure there are no lumps. Add the lard cut into cubes and the egg. Use your fingers to knead the dough until it becomes smooth and easy to shape. If using butter, make sure it is at room temperature for easier incorporation.
2. Forming the base: Divide the dough into two parts, with ¾ for the base and ¼ for the topping. Roll out the ¾ of the dough on a floured surface until you get a sheet about 5 mm thick. Place the dough sheet in a tart pan (preferably with a removable bottom) and ensure the edges are well covered.
3. Preparing the plums: Wash the plums, cut them in half, and remove the pits. Cut each half into 2-3 pieces, depending on the size of the plums. Arrange the plum pieces evenly on the tart base.
4. Adding sugar and cinnamon: Sprinkle the remaining sugar (approximately 100 g) over the plums and, if desired, add a little cinnamon for flavor. Cinnamon pairs wonderfully with the sweetness of the plums and will add an extra layer of flavor.
5. The topping: Roll out the remaining dough and cut it into thin strips. Arrange the dough strips over the plums in a lattice pattern or simply place them decoratively, partially covering the fruit.
