Papanași with black cherry jam

Cottage cheese gives the dough its body in papanași (Romanian cheese doughnuts) with black cherry jam, a specialty of the Moldova region. They come out golden on the outside and soft in the middle, with crisp edges from the hot oil. I serve them with the sour cream on one side of the plate and the jam on the other, so everyone can pick. Prep: 25 minutes. Cooking: 24 minutes. Total time: 49 minutes. Servings: 4. About 810 kcal and 23 g protein per serving.
Ingredients
- 350 g cottage cheese
- 2 eggs
- 50 g sugar
- 1 pinch salt
- 1 teaspoon baking powder
- 1 packet vanilla sugar (10 g)
- 340 g flour
- 2 tablespoons flour for working
- 500 ml oil for frying
- 200 g black cherry jam
- 200 g sour cream
Preparation
1. In a bowl, put 350 g crumbled cottage cheese, then add 1 pinch salt, 50 g sugar, 1 packet vanilla sugar, 1 teaspoon baking powder and 2 beaten eggs. 2. Mix until the mixture is smooth, then add 340 g flour and start working it in with a spoon. Knead by hand until you get a dough that doesn't stick to your hand but isn't hard either. 3. On a surface dusted with 2 tablespoons flour for working, divide the dough into 8 large pieces for the papanași and 8 smaller pieces for the mot. 4. Shape the small pieces into balls. Round the large ones, flatten them, and with your fingers make a hole in the middle that you widen a little. 5. For frying, use a cast iron pan or a pot with a thicker bottom. Pour 500 ml oil into it, to a depth of at least 5-6 cm, and heat it over moderate heat until a small piece of dough dropped in the oil immediately bubbles around it and floats. Then lower the heat. 6. Fry the papanași in batches of 4, 3 minutes on each side, until they are nicely golden. 7. Lift the papanași onto paper towels so the excess oil drains off. 8. Serve the papanași warm, with 200 g sour cream and 200 g black cherry jam.
Notes
If the dough sticks to your fingers, add another spoon of flour, but no more, otherwise the papanași come out tough. The small pieces brown faster than the large ones, so take out the golden ones without only watching the timer. Papanași keep in the fridge for up to 3 days, and when reheating they work well in a dry pan. They contain gluten, eggs and dairy, so they are not suitable for people who avoid these ingredients. A cup of tea goes well with them.

Yes, the same amount, 200 g, is served in exactly the same way.
What if the dough breaks when shaping?
Wet your palms with cold water and knead for another 1 minute, without adding flour.
