Preparation time: 3 hours
Number of servings: 18

Ingredients

*For the base:*
- 8 large eggs
- 5 tablespoons of sugar
- 5 tablespoons of flour
- 4 tablespoons of ground walnuts
- 1 packet of baking powder
- A pinch of salt

*For the syrup:*
- 400 ml water
- 3 tablespoons of sugar
- Vanilla essence

*For the vanilla cream:*
- 1 packet of vanilla cream (preferably Dr. Oetker)
- 3 tablespoons of sugar
- 250 ml milk

*For the berry cream:*
- 1 packet of berry cream (preferably Dr. Oetker)
- 3 tablespoons of sugar
- 250 ml milk

*For decoration:*
- 200 ml liquid cream
- White chocolate for letters
- Wafer flowers
- Sugar confetti

Step by Step

1. Preparing the white chocolate letters:
Start by melting the white chocolate. You can do this either in a double boiler or in a special fondue pot. Make sure no water gets into the chocolate, as it will spoil. Once melted, pour the chocolate into letter molds and refrigerate until set. These letters will add a touch of personality to your cake!

2. Preparing the base:
In a large bowl, beat the egg whites with a pinch of salt until fluffy. Gradually add the sugar and continue mixing until you achieve a firm meringue. Meanwhile, add the egg yolks, baking powder, flour, and ground walnuts. Gently fold with a spatula, being careful not to lose the air in the mixture. Pour the mixture into a round cake pan lined with parchment paper or non-stick foil, and bake at 180 degrees Celsius for about 35 minutes. Once done, let it cool completely.

3. Preparing the syrup:
In the meantime, to make the syrup, boil the water with the sugar in a small pot. Once the sugar has dissolved, remove from heat and add the vanilla essence. Allow the syrup to cool completely before using.

4. Preparing the creams:
For the vanilla cream, mix the cream powder with cold milk and sugar using a mixer until creamy. Do the same for the berry cream. These creams will give a delicious taste and a smooth texture to the cake.

5. Assembling the cake:
Once the base has cooled, cut it into two uneven parts, ensuring the base is thicker than the top. Soak each layer with the cooled syrup. Place the base on the serving platter, add half of the vanilla cream, followed by half of the berry cream. Then cover with the top of the cake.

6. Decorating the cake:
Whip the liquid cream with a mixer until firm but not too stiff. Use the remaining cream to decorate the cake, alternating between the vanilla and berry cream in a piping bag to create roses on the cake. Use the whipped cream to make details on the top of the cake. Finally, decorate with the white chocolate letters, wafer flowers, and sugar confetti. This will be a true work of art!

Chef's Tip:
For an extra flavor boost, you can add a few drops of almond essence to the vanilla cream or, if you like fresh fruit, you can add some pieces of berries between the creams. The cake will gain a wonderful freshness!
