### Ingredients:
For the base:
- 10 eggs

- 270 ml oil
- A pinch of salt
- Vanilla, to taste
For the cream:
- 5 eggs
- 150 g sugar
- 4 packets of ness (about 16 g)
- 500 ml milk
- 6 tablespoons cornstarch
- 2 packets of gelatin
- 300 ml whipped cream
- 150 ml whipped cream (for decoration)
- 100 g grated chocolate (for decoration)
### Step-by-step instructions:
1. Preparing the base:
- Start by separating the egg whites from the yolks. Beat the egg whites with a pinch of salt until you obtain a firm foam. Make sure the bowl and utensils are completely dry to achieve perfect foam.
- In another bowl, cream the yolks with the sugar for about 10 minutes, until they become a creamy, light-colored mixture. This step is essential to incorporate the air needed for a fluffy base.
- Add the flour mixed with baking powder, breadcrumbs, and cocoa to the yolk mixture, homogenizing well.
- Gradually incorporate the honey, milk, and oil, mixing after each ingredient.
- Finally, carefully add the beaten egg whites, mixing with a spatula to avoid losing the volume obtained.
2. Baking the layers:
- Divide the mixture into two equal parts and pour it into trays lined with baking paper (the large tray from the oven is ideal). Bake the layers in a preheated oven at 180°C for 30 minutes. Check the consistency with a toothpick test - if it comes out clean, the layers are ready.
- Let the layers cool on a rack before assembling.
3. Preparing the cream:
- In a bowl, beat the eggs with the sugar until completely dissolved. Add the ness dissolved in 2 tablespoons of water and the cornstarch, mixing well.
- Heat the milk and gradually add it to the egg mixture, stirring continuously to avoid curdling the eggs.
- Pour the mixture into a saucepan and cook over low heat, stirring constantly until it thickens. Allow the cream to cool completely.
- Hydrate the gelatin in cold water, then dissolve it in the microwave and incorporate it into the cooled cream. Whip the cream and gently fold it into the ness cream using a spatula.
4. Assembling the cake:
- Place the first layer in a pan (ideally one with removable sides). Add 2/3 of the ness cream and refrigerate to set.
- Place the second layer on top and complete with the remaining cream. Refrigerate again for 2-3 hours.
- Before serving, whip 150 ml of cream with a stabilizer and 1 tablespoon of honey, then spread it evenly on top. Decorate with grated chocolate.
