I have made this cake several times, especially when I need a truly dense dessert, with chocolate in every layer. It’s not the kind of light cake, but one where the chocolate stands out, and the rose decoration made of ganache makes it suitable for special days. Usually, I assemble it in stages - first the base, then the cream and decoration.

Ingredients

Base
2 layers of cocoa cake (made according to your usual cocoa cake recipe)

Syrup
400 ml water
2 tablespoons honey
3 tablespoons sugar
juice from one medium lemon
2 tablespoons rum

Chocolate Ganache
500 g dark chocolate (minimum 70% cocoa)
400 ml heavy cream

Decoration
300 g dark chocolate
200 g white chocolate
300 ml heavy cream

Preparation Method

1. Prepare the base
If you don’t have the base made already, prepare it first, according to a classic cocoa cake recipe, then let it cool and cut two thick, equal layers.

2. The syrup
Put the water, honey, sugar, and lemon juice in a small pot to boil. Let it cook for a few minutes until the sugar and honey are completely dissolved and the syrup has a lighter texture without thickening. Turn off the heat and add the rum. Let the syrup cool to room temperature.

3. The chocolate ganache
Break the dark chocolate into small pieces and place them in a large bowl. Heat the heavy cream until just before boiling (don’t let it actually boil). Pour the hot cream over the chocolate. Wait a minute, then mix well with a spatula or spoon until the chocolate melts and you get a glossy cream. Let the ganache cool completely, then briefly mix it with a mixer to make it smooth.

4. Assembling the cake
Place the first layer of cake on a serving plate. Soak the layer evenly with half of the syrup. Spread half of the ganache cream over the layer, leveling it with a spatula. Place the second layer of cake on top, soaking this one as well. Cover the entire cake with the remaining ganache, evenly, on the sides and on top. Place the cake in the refrigerator while you prepare the glaze and decoration.

5. The glaze and decoration with dark chocolate
Chop 200 g of dark chocolate into small pieces. Heat 200 ml of heavy cream (you can do this in the microwave) until just before boiling, then pour it over the chocolate. Mix until completely melted. Let it cool - the cream should be firm enough to hold its shape when piped. Place the ganache in a piping bag with a star tip and decorate the edges of the cake with swirls or chocolate roses.

6. Decoration with white chocolate
Melt 200 g of white chocolate in 100 ml of heavy cream (similarly, heat the cream, pour it over the chocolate, mix). Cool until you achieve the right consistency for piping. Place the cream in a piping bag with the same tip and decorate the cake - all around and on top, between the dark chocolate roses.

7. Finishing the decoration
With the remaining dark chocolate cream, form roses in the center of the cake. Finally, place the cake in the refrigerator to set everything well before serving.

Why I make this recipe often

For me, it’s a good cake when I want a dessert with real chocolate, not too sweet, but rich and substantial. It keeps well in the fridge for a few days, and the ganache doesn’t change texture. It has a festive appearance without needing complicated pastry techniques.

Tips and variations

Tips

Use chocolate with at least 70% cocoa for the ganache - the texture and taste are much better. If you want to control the sweetness, adjust the amount of sugar in the syrup to taste.

Substitutions

You can use milk chocolate for decoration if you don’t want the cake to be too intense. The heavy cream can be either plant-based or animal-based, the important thing is that it’s for whipping, not cooking cream.

Variations

If you want, you can add a thin layer of raspberry jam between the layers for contrast. For decoration, you can use only one type of chocolate.

Serving ideas

Slice the cake with a knife dipped in hot water for smooth cuts. It pairs well with an espresso or fresh fruits (raspberries or strawberries).
