We begin preparing a delicious and aromatic dessert that will bring a touch of sunshine to your days. The first step is to grate the zest of two oranges. Make sure to remove the white part, as it can give a bitter taste. Then, separate the fruit segments and cut the pulp into small cubes, which will add a pleasant texture to our cake.

In a pot, bring the milk to a boil together with the grated orange zest and a few cloves. Let this mixture boil for a few minutes, then take it off the heat. Cover the pot with a lid and let it sit for a few hours to allow the flavors to infuse. This step is essential, as it will enhance the final taste of the cake.

After the infusion time has passed, remove the cloves and put the pot back on high heat. Add the salt, 100 grams of sugar, and vanilla sugar, stirring constantly until the sugar is completely dissolved and the milk reaches a boiling point. Then, add the rice, stirring 2-3 times at the beginning. It is important not to stir excessively, so as not to break the rice grains. Then, reduce the heat to low, cover the pot, and let it simmer for 10 to 20 minutes, until the rice is soft and the milk is almost completely absorbed.

After you have the perfectly cooked rice, take the pot off the heat and add the butter cut into pieces, as well as the orange cubes. Mix the composition well and let it cool. Once cooled, use a fork to go through the rice mixture a few times and incorporate the eggs. These will bind the entire composition, giving it a fine and airy texture.

In a baking dish, grease both the bottom and the sides with butter, then sprinkle the remaining sugar. Cut the pulp of three oranges into thin rounds and arrange them evenly on the bottom of the dish. Pour the rice mixture over the orange rounds and level the surface. Preheat the oven to 180 degrees Celsius and place the dish in the oven for about 40 minutes, or until the cake becomes firm and nicely browned.

When it is ready, take the cake out of the oven and immediately turn it onto a platter. The orange rounds will now beautifully appear on top, giving an appetizing look.
