To prepare a delicious semolina soufflé, we start by gathering all the necessary ingredients. You will need 1 liter of milk, 150 g of sugar, 150 g of semolina, 4 egg yolks, 2 egg whites, the zest of one lemon, a pinch of salt, and optionally, butter or margarine for greasing the mold. Make sure you also have toppings on hand, such as fruit compote, melted chocolate, or fresh fruits for a special taste and presentation.

The first step is to put the milk in a large pot and bring it to a boil. Add the sugar and mix well until completely dissolved. When the milk starts to boil, it's time to add the semolina, but remember to add it in a rain-like manner, continuously stirring with a spatula or whisk to prevent lumps from forming. Continue to simmer the mixture on low heat, stirring constantly, until the composition thickens, achieving a creamy consistency.

Once the semolina is cooked, remove the pot from the heat and let the mixture cool slightly. At this point, it is important to add the egg yolks, lemon zest, and a pinch of salt. These ingredients will not only enhance the flavor of the soufflé but also contribute to its fine texture. Mix everything very well until you obtain a homogeneous composition.

Separately, beat the egg whites with a pinch of salt until you achieve a firm foam. This step is crucial, as the beaten egg whites will add a slight fluffiness to your soufflé. Carefully fold the beaten egg whites into the semolina mixture, taking care not to deflate them.

Prepare a baking dish that you grease with butter or margarine to prevent the soufflé from sticking. Preheat the oven to 180 degrees Celsius, then pour the mixture into the mold, leveling the surface with a spatula. Place the dish in the preheated oven and bake the soufflé on low heat for about an hour or until it becomes golden and has risen beautifully.

Once the soufflé is ready, take it out of the oven and let it cool for a few minutes before inverting it onto a serving plate. You can decorate it with your preferred fruit compote, melted chocolate, or other toppings to give it an attractive appearance.
