To prepare a delicious roll, the first step is to preheat the oven to 180 degrees Celsius. This will ensure even and perfect baking of the sponge cake. We start by separating the eggs, being careful not to mix the yolks with the whites. The egg whites will be beaten into a foam with a pinch of salt, which will help achieve a fluffy texture. Once they start to stiffen, we gradually add the sugar and vanilla sugar, continuing to mix until it dissolves completely. Once we have a firm foam, we add all the yolks at once, gently mixing to avoid losing the incorporated air.

After the yolks are well incorporated, we can add our favorite essences, such as vanilla or orange essence, for an extra flavor. Then, we pour in the oil and mix again. The last ingredient we will integrate is the sifted flour along with the baking soda. It is essential to mix well until we achieve a homogeneous dough without lumps.

We prepare a large baking tray, greased with a little oil and lined with baking paper. Here, for an attractive look, we can take a portion of the dough and mix it with cocoa, creating a beautiful pattern. We can use a piping bag to distribute the dough, but a spoon can be just as effective. We place the tray in the oven for about 5 minutes, then remove the tray and pour in the rest of the dough, leveling it evenly. We roll the tray back into the oven for about 20 minutes, until the sponge cake becomes slightly golden.

Now let’s focus on the delicious cream. In a bowl, we mix ricotta, sour cream, and cottage cheese with sugar and vanilla sugar, adjusting the sweetness to taste. If desired, we can add fresh fruits, but we should only place them after the cream is spread on the unveiled roll, to avoid them getting crushed.

After the sponge sheet is baked, we take it out of the oven and gently turn it onto a damp towel. We carefully remove the baking paper and, with the help of the towel, roll the sponge sheet. We let it cool slightly, then unrolling the roll will allow us to apply the filling. We roll it up again carefully, being careful not to break it.

For an even more attractive presentation, we can add a chocolate glaze or powdered sugar on top of the roll. Once it has completely cooled, the roll can be stored in the refrigerator, making it an ideal dessert for warm days. This is a perfect choice for any occasion! Enjoy your meal!

For the dough: 5 smaller eggs, a pinch of salt, 1 cup of sugar, 1 packet of vanilla sugar, 1 cup of flour, 1 teaspoon of baking soda, 5 tablespoons of oil, vanilla and rum essence. Optional: cocoa. For the filling: 200g Ricotta, 5 tablespoons of cottage cheese, 1 tablespoon of sour cream, sugar to taste, 1 packet of vanilla sugar.
