To prepare a delicious cheese-based dessert, we will start by ensuring that all the ingredients are ready at hand. In a large bowl, we will mix the fresh cheese with the beaten eggs, making sure that the texture becomes smooth. It is important for the cheese to be well mashed so that there are no lumps in the mixture. We continue by adding a pinch of salt to enhance the flavors, then we add the grated lemon zest and lemon juice. The latter will provide a fresh taste and a pleasant contrast to the sweetness of the dessert.

The next step is to integrate a spoonful of semolina into the mixture, which will help bind the ingredients and give a slightly denser texture. Don't forget the raisins! They should have been soaked in warm water with a little rum essence and sugar to intensify their flavor. After soaking for about 15 minutes, we will add them to the mixture, stirring well to evenly distribute each ingredient.

For a sweet finish, we sprinkle granulated sugar on top, which will caramelize during baking, adding a crunchy note.

We bake the dessert at moderate heat for about 30-40 minutes, or until it becomes golden and crispy. It is important to let it cool slightly before cutting it.
