Desert - Raspberry Tart by Cleopatra A. - Recipia
To prepare a delicious dessert that delights all the senses, we will start with a fluffy base and a refreshing filling, perfect for warm days. We begin with the preparation of the base: first, we will separate the egg whites from the yolks. The egg whites are whipped until frothy, gradually adding the vanilla sugar and a pinch of salt, until we achieve a firm and glossy foam. This step is essential, as the incorporated air will make the base light and fluffy.

In another bowl, the yolks are beaten with sugar until the mixture becomes creamy and light in color, with a fine texture. Then, the two mixtures are carefully combined, taking care not to deflate the egg whites. We then add the baking powder, which will help the base to rise, and the flour gradually, mixing with a spatula to maintain the aeration of the mixture.

Once we have a homogeneous mixture, we pour the mixture into a baking pan greased with butter and dusted with flour, ensuring it is evenly distributed. We bake the base in a preheated oven at medium temperature for about 30 minutes. Once it has risen beautifully and turned golden brown, we take the base out of the oven and let it cool for 10 minutes in the pan, making it easier to remove. After that, we transfer the base to a clean cloth to cool completely.

Once the base has cooled, we move on to the next stage: preparing the whipped cream. We whip the cream; I prefer to use a blender because it is quick and efficient; in about 10 seconds, we achieve well-whipped cream. We spread the cream evenly over the cooled base, ensuring we cover the entire surface. Then, we beautifully arrange the raspberries, as desired, either in concentric circles or in lines, for a pleasing visual effect.

To finish the dessert, we prepare the jelly according to the instructions on the packet. It is important to pour the jelly carefully over the raspberries so as not to disturb the whipped cream. Once the jelly has cooled slightly, we can distribute it evenly. After we are done, the dessert is transferred to the refrigerator for a few hours, so it can set and the flavors can meld.

This dessert is not only refreshing but also easy to prepare, making it perfect for any occasion. If the raspberries are not very sweet, a good idea would be to add a tablespoon of sugar to the cream to balance the taste. Enjoy this delicacy that combines textures and flavors in a delicious way!
