Lenten Pancakes with Cherries and Plant-Based Whipped Cream
We start by preparing the necessary ingredients for our delicious pancakes. In a large bowl, we add the dry ingredients: flour, baking powder, salt, and sugar. We mix well with a whisk or spatula, ensuring that all the ingredients combine evenly. Then, in another container, we take care of the liquid ingredients: eggs, milk, and oil. We beat these ingredients well with a mixer or fork until we achieve a homogeneous mixture.
Once we have prepared both mixtures, we pour the liquid ingredients over the dry ones. Using a spatula, we gently mix, being careful not to form lumps. Once we have a smooth batter, we transfer everything to a blender or food processor. We blend well for a few minutes until the mixture becomes fine and creamy. Now, it's time to let the batter rest in the refrigerator for two hours. This step is essential as it allows the gluten to develop, and the pancakes will be much fluffier.
After two hours, we take the mixture out of the refrigerator and check the consistency. If we notice that the batter is too thick, we can gradually add water while constantly mixing. Also, if we added more water than necessary, a simple solution is to incorporate a few tablespoons of ground nuts to achieve the desired consistency, similar to thicker sour cream.
Now we are ready to cook the pancakes. We heat a non-stick pan over medium heat and grease it with a little oil. We pour a portion of batter into the pan and spread it evenly to form a medium-thick pancake. We let it cook for a few minutes until bubbles form on the surface of the pancake and the edges turn golden. We flip the pancake using a spatula and let it cook on the other side for a few more minutes until it becomes nicely browned.
Once all the pancakes are ready, we can fill them. We form a cone from each pancake, add our favorite fruits, whether strawberries, bananas, or blueberries, and decorate with whipped cream and chocolate syrup. This combination will bring a sweet and refined taste.
For an extra flavor boost, we can serve the pancakes with jam, honey, cinnamon sugar, or even ice cream. The possibilities are endless, and every meal can become a unique and delicious experience. So, enjoy your pancakes and let your imagination soar!
