To prepare a delicious cheese Pasca, we start by ensuring that we have all the ingredients ready and at hand. We will use a detachable mold with a diameter of 25-26 cm, which we will thoroughly grease with margarine to prevent sticking. In a saucepan, we melt the margarine over low heat, being careful not to let it boil. Once completely melted, we let it cool to room temperature.
Next, we take care of the eggs. We separate the egg whites from the yolks, placing the whites in a large bowl. We add a pinch of salt and start beating them with a mixer at medium speed until they become frothy and start to form soft peaks. Gradually, we add the powdered sugar, continuing to mix until we obtain a firm and shiny foam. In another bowl, we mix the yolks with the cooled margarine, well-drained and mashed cheese, as well as the raisins that have been soaked in rum for added flavor.
After obtaining a homogeneous mixture, we add this mixture over the beaten egg whites. It is essential to carefully fold using a spatula, in a turning motion, so as not to lose the air from the egg whites. This will ensure a fluffy and airy texture. The next step is to add the sifted flour along with the baking powder, mixing again gently.
Once the composition is well homogenized, we carefully pour it into the greased baking pan. We preheat the oven to 180 degrees Celsius and place the pan in the oven for about 50 minutes. It is important to perform the toothpick test – it should come out clean when inserted in the middle of the Pasca. When ready, we let the Pasca cool slightly while we prepare the glaze.
For the glaze, we caramelize the sugar in a saucepan without stirring, until it turns golden. We extinguish the caramel with water and add the starch dissolved in milk, stirring constantly to avoid lumps. After obtaining a uniform sauce, we add the 50 g of chocolate, stirring gently to melt completely. This delicious sauce is spread evenly over the cooled Pasca, which has been turned out onto a platter.
When the glaze has cooled slightly, we decorate the edges with chopped nuts, hazelnuts, and chocolate for an attractive appearance and exceptional taste. Thus, we obtain a cheese Pasca that is not only delicious but also very beautiful, perfect for any celebration or gathering with loved ones. Enjoy every bite of this delicacy!
