To prepare a delicious and fluffy cake, we start with an essential step: beating the egg whites. In a clean bowl, using an electric mixer, we beat the egg whites on high speed until we achieve a firm and glossy foam. This will form the airy base of our cake, giving it a light and fluffy texture.

Meanwhile, we prepare a syrup from water and sugar. In a saucepan, we add water and sugar in equal proportions and place the saucepan over medium heat. We stir constantly until the sugar completely dissolves, and the mixture reaches the boiling point. It is important not to let the syrup boil too much, as we want an ideal consistency. Once the syrup is ready, we pour it hot over the beaten egg whites, continuing to mix on low speed. This step will help stabilize the egg white foam and add a layer of sweetness.

After the mixture has cooled slightly, we add the egg yolks, one at a time, making sure to incorporate them well before adding the next. We begin to add the oil, drop by drop, stirring constantly to obtain a homogeneous emulsion. Finally, we gradually add the flour, sifted to avoid lumps. We gently fold with a spatula, so as not to lose the air in the mixture.

To prepare the pan, we grease it with oil and sprinkle breadcrumbs or, in my case, crushed cookies, which will provide a crunchy texture. At the bottom of the pan, we place an even layer of grated apples, which will add moisture and flavor to the cake. On top of the apples, we sprinkle crushed nuts, which we can chop by hand to obtain larger pieces that will add extra crunch.

After pouring the batter over the apples and nuts, we place the pan in the preheated oven at 180 degrees Celsius. We bake the cake for about 30-35 minutes, or until it is nicely browned and passes the toothpick test. Once baked, we let the cake cool completely in the pan. Then, with great care, we turn the cake onto a plate, being careful not to break it. It is important to note that the apples are not sautéed, to preserve their fresh flavor and crunchy texture. This cake is perfect to be served at a family meal or a gathering with friends, and each slice will bring a smile to the faces of loved ones.
