To prepare a delicious apple cake, we start by preparing the cake pan. It is generously greased with butter, ensuring that every corner is covered, then lined with breadcrumbs. Once we have prepared the pan, we turn our attention to the apples. They are carefully peeled, making sure to choose fresh and fragrant apples. They are cut into appropriately sized pieces, preferably as thin as possible, to bake evenly and quickly. Once the apples are sliced, they are evenly placed in the prepared tray, and a handful of flour is lightly sprinkled over them. Next, we take care of the egg whites. They are beaten with a pinch of salt using a mixer until they become firm peaks. It is important that the egg whites are beaten enough to form stable peaks. Once we have achieved the desired consistency, we gradually add the sugar, continuing to mix until the mixture becomes glossy and dense. Now it is time to incorporate the oats, carefully folding from top to bottom to maintain the aeration of the mixture.
After the oats are well incorporated, the baking powder is added, mixing gently again until everything is homogenized. The resulting batter will have a slightly dense but fluffy texture, perfect for combining with the apples. The egg white mixture is carefully poured over the apples in the tray, ensuring that the entire surface is evenly covered.
The cake pan is placed in the preheated oven at a moderate heat, where it will bake for about 35 minutes. It is important to monitor the cake in the last few minutes, as we want to achieve a nicely browned crust on top.
