Thick sour cream is drained for 6-8 hours before it goes into the filling for Romanian sour cream pască. Beneath the thin pastry, the egg and lemon filling browns on top and stays soft in the center; I cut it into narrow slices only once it has cooled completely. Preparation: 40 minutes. Cooking: 60 minutes. Resting: 8-10 hours. Total time: 9 hours and 40 minutes to 11 hours and 40 minutes. Servings: 14. About 420 kcal and 8 g of protein per serving.

Ingredients

For draining

  • 1 kg thick sour cream 20% fat
  • 500 g cornmeal

For the dough

  • 125 g butter or margarine
  • 100 g powdered sugar
  • 2 egg yolks
  • 1 g salt
  • 250 g flour
  • 1 tablespoon butter
  • 1 tablespoon flour

For the filling

  • 7 eggs
  • 180 g powdered sugar
  • 4 packets vanilla sugar
  • 1 lemon
  • 1 g salt
  • 2 tablespoons flour
  • 2 tablespoons semolina

Preparation

1. Put the sour cream in cheesecloth or a thick white cloth and tie the ends together. Set the bundle in a bowl, cover it well with 500 g of cornmeal and leave it for 6-8 hours to drain off the whey. Carefully lift out the cloth and discard the cornmeal. 2. Over about 15 minutes, beat the butter or margarine with the powdered sugar until fluffy. Gradually add the egg yolks beaten with the salt, then the sifted flour, and knead the dough. 3. Roll out the dough over about 10 minutes, into a sheet 5-6 mm thick. Butter and flour a 28 cm springform pan, then line the base and sides with the dough. 4. Beat the yolks from the 7 eggs with the powdered sugar, vanilla sugar, grated lemon zest and salt. Fold in the drained sour cream mixed with the 2 tablespoons of flour, then beat the egg whites to stiff peaks and gently fold them into the filling. Allow about 10 minutes for this step. 5. Sprinkle the semolina over the pastry and pour the filling on top. Bake in a preheated oven at 150°C, on low heat, for about 60 minutes, until nicely browned. 6. Let the pască cool completely, about 2 hours, before removing it from the pan.

Notes

Keep covered in the fridge for up to 3 days; you can bake it a day ahead. I start draining the sour cream the night before so I don't have to rush on the day I'm serving it. A slice goes well with black tea, which lets the lemon zest come through. Choose thick sour cream with at least 20% fat; if it's too runny, the filling may stay soft even after draining. If there's still a lot of whey in the bowl after 6 hours, leave the cloth to drain until the full 8 hours. You can use 125 g of margarine instead of butter in the dough; pască contains gluten, dairy and eggs.

Frequently asked questions

Can I make the dough a day ahead?

Yes. Wrap it and keep it in the fridge for up to 24 hours, then leave it on the counter for 10 minutes before rolling it out.

How can I tell when the filling is baked?

The top should be browned, and the center may wobble slightly when you move the pan. It will set as it cools.

Why did the filling sink after baking?

The foam loses air if you mix it vigorously. Fold in the egg whites with a spatula, in 2-3 batches.

Can I use whole wheat flour in the dough?

Yes, replace no more than 50 g of the 250 g of flour with whole wheat flour. More may make the pastry less tender.
