Cherry Dumplings
Sour cherries, with their intense aroma and sweet-sour taste, are a wonderful ingredient for delicious treats. We start by pitting the cherries, a process that may seem simple but requires a bit of attention to avoid damaging them. Once we are done, we place them in a bowl and generously cover them with sugar, gently mixing to sweeten them. This step will not only make them sweeter but will also help them release their juice, thus creating a natural syrup that will enhance the flavor of the final dish. We leave the cherries in the refrigerator for a day, a patience that will be rewarded with intense flavors and a juicy texture.
In the meantime, we get to work preparing the dumplings. The dough can be made from flour, eggs, water, and a pinch of salt. We knead the ingredients until we obtain an elastic dough, which we let rest for a few minutes. We then roll out the dough into thin sheets, cutting it into squares or circles, depending on preference. We place a cherry in the center of each dumpling, being careful not to put too much filling, as they will open while boiling. We close the dumplings by folding the dough and pressing the edges to ensure they are well sealed.
After we finish preparing the dumplings, we take care of boiling them. We fill a large pot with water, add a pinch of salt, and a splash of oil to prevent sticking. Once the water has started to boil, we carefully add the dumplings, being careful not to overcrowd them. They are boiled until the dumplings rise to the surface, indicating they are ready. This process doesn’t take long, so we need to be careful not to leave them on the heat for too long.
Once they are cooked, we remove them with a slotted spoon and place them on a platter. We generously pour the juice left by the cherries over them. This combination of warm dumplings filled with sweet and sour cherries and their natural syrup will create an unforgettable dessert. Serve the dumplings warm, perhaps with a spoonful of sour cream or a drizzle of honey, for an extra touch of flavor. This dish is not only a delicacy but also a true explosion of flavors that will delight the taste buds of anyone who enjoys it.
