The egg is a versatile and essential ingredient in many pastry and dessert recipes. In this recipe, we aim to prepare a cherry cake that is sure to become a family favorite. We start by preparing all the necessary ingredients: fresh eggs, sugar, a pinch of salt, sunflower oil, sour cream, vanilla essence, flour, and baking powder. Make sure you also have the cherries on hand, whether they are fresh or from a jar.

The first step is to crack the eggs into a deep bowl. Add the sugar and a pinch of salt, then begin to mix with a mixer on medium speed. Continue mixing until the mixture becomes whitish and fluffy, having an airy texture. This is an important moment, as the air incorporated into the mixture will help the cake to be fluffier.

Once you have a uniform mixture, gradually add the oil, continuing to mix. The oil will provide the cake with a pleasant moisture and a rich taste. Next, add the sour cream, which will contribute to creating a velvety texture. Don't forget the vanilla essence, which will add a wonderful aroma to the cake.

Now, it's time to incorporate the flour and baking powder. Sift the flour to avoid lumps and gently mix with a spatula or wooden spoon, being careful not to over-mix to maintain the airy texture of the mixture. Finally, add the cherries, which you can cut in half if they are large, and gently mix to distribute them evenly in the mixture.

Prepare a baking tray that you grease with butter or oil and sprinkle a little flour to prevent the cake from sticking. Pour the obtained mixture into the tray, smoothing the surface with a spatula. Preheat the oven to 180 degrees Celsius and place the tray inside. Bake the cake for about 30-40 minutes, or until, if you do the toothpick test, it comes out clean.

Once the cake is baked, let it cool in the tray for a few minutes, then transfer it to a rack to cool completely. You can serve it plain or dusted with powdered sugar on top. This cherry cake is perfect to be enjoyed alongside a cup of tea or coffee, offering a sweet-sour taste that will delight any palate. Enjoy your meal!
