Desert - Caramel by Roza M. - Recipia
To prepare a delicious homemade caramel, start by taking a medium-sized saucepan, in which you will add the sugar. Choose a good quality sugar, as it will influence the final taste of the caramel. Place the saucepan over low heat, ensuring that the temperature is constant and moderate. It is essential not to stir the sugar at this stage; instead, you can gently shake the pan from time to time to even out the melting process. Watch as the sugar begins to melt and gradually transforms into a golden-brown color, a sign that the caramel is almost ready. This process can take a few minutes, so be patient and do not worry your mind.

Once the sugar has reached the desired hue, take the pan off the heat and stir well with a silicone spatula or a wooden spoon. This step is important to homogenize the melted sugar and to avoid crystallization. After obtaining a uniform mixture, transfer the caramel to another pan, preferably one made of glass or ceramic, which will withstand heat. At this point, add the butter cut into flakes. The butter will contribute to the creaminess of the caramel, so do not hesitate to use quality butter with a high-fat content.

After adding the butter, mix the ingredients well so that the butter melts completely. It is time to add the heavy cream, which will turn the caramel into a creamy and delicious sauce. Place the saucepan back on the heat, but this time over medium heat, and continue to stir constantly. Observe how the mixture becomes increasingly homogeneous and creamy, and the sweet aroma of caramel will spread throughout the kitchen.

After a few minutes of cooking, when the caramel has reached the desired consistency, take it off the heat and let it cool slightly. Carefully transfer it to a clean jar that can be sealed airtight. The caramel will keep well in the refrigerator for a few weeks, but make sure to take it out of the fridge about 30 minutes before using it, to reach room temperature. This caramel is perfect for use as a topping for ice cream, pancakes, or cakes, bringing a touch of magic and flavor to any dessert.
