To prepare a delicious and decadent chocolate almond cake, we start by melting butter together with high-quality chocolate. This step is done in a double boiler, where we place a pot of water to boil, and above it, we place another pot in which we add the butter and chocolate. It is essential to stir constantly to ensure that both ingredients melt evenly and do not burn. Once the chocolate and butter have turned into a homogeneous mixture, we transfer them to a larger bowl, letting them cool slightly.

After our mixture has cooled, we add sugar and cocoa, mixing well with a spatula or whisk to ensure that the sugar completely dissolves. It is important to make sure that no sugar crystals remain, in order to achieve a fine texture. Then, we start incorporating the egg yolks, one at a time, mixing well after each addition. This will add richness and provide the necessary structure for the cake.

Now, we come with the ground almonds. If you prefer, you can use whole blanched almonds, which you lightly roast in a pan to enhance their flavor, then grind them according to your preferences – either coarser or finer. This is a personal choice that will influence the final texture of the cake. After we have added the almonds to the mixture, it is time to deal with the egg whites.

We beat the egg whites until we obtain a firm foam. This step is crucial, as the air incorporated into the egg whites will help the cake to be fluffy. After the egg whites are beaten, we gradually add them to our chocolate mixture, stirring with a wooden spoon from the bottom up to maintain the air in the egg whites. This step will ensure us an airy and soft cake.

Now we prepare the round baking pan, with a diameter of 26-28 cm, which we line with parchment paper, ensuring that the cake will come out easily after baking. We pour the mixture into the pan, being careful not to overfill, as the cake will rise during baking. We preheat the oven to a temperature of 160° - 180° C and bake the cake for about 50 minutes.

To check if it is done, we use a toothpick that we insert into the center of the cake; if it comes out clean, the cake is perfect. After baking, we let the cake cool in the pan, then dust it with powdered sugar, giving it an elegant appearance. The inside will remain slightly moist, which is exactly what we want for a decadent chocolate cake. Enjoy each slice and savor its rich flavors!
