To begin, you will need the following ingredients: 500 g of cocoa ice cream, 500 g of cookie ice cream, 200 g of digestive biscuits, 100 g of melted butter, 100 g of dark chocolate for decoration, and some cherries or berries for decoration.

The first step in making the cake is to prepare the base. Crush the digestive biscuits in a food processor or you can crush them by hand in a bowl. Once they reach a fine consistency, add the melted butter and mix well until the mixture becomes homogeneous. This will form the cake crust. Place the mixture in a springform pan, pressing down well to create a compact base. Put the pan in the fridge for about 30 minutes to set.

Meanwhile, take the cocoa and cookie ice creams out of the freezer to soften a little, about 10-15 minutes. This will make it easier to mold and layer the cake. Start by putting a generous layer of cocoa ice cream over the biscuit base, leveling it well with a spatula. Then, add a layer of cookie ice cream, ensuring it is evenly distributed.

After adding the two layers of ice cream, cover the cake with plastic wrap and leave it in the freezer for at least 3 hours, or until it becomes firm. This step is essential to achieve the perfect texture of the cake.

When you are ready to serve the cake, melt the dark chocolate in a bowl over a double boiler or in the microwave, being careful not to burn it. Remove the cake from the freezer and, using a spatula, pour the melted chocolate over the top, creating a delicious layer of glaze. Let the chocolate set for a few minutes, then decorate the cake with fresh cherries or berries.
