Desert - Bitter chocolate truffles by Maia D. - Recipia
We begin our culinary adventure with a basic ingredient that cannot be missing from any dessert recipe: chocolate. In a heat-resistant bowl, we add chocolate cut into small pieces to facilitate even melting. To this chocolate, we add two tablespoons of water, which will help maintain a fine and creamy texture. We place the bowl over a pot of boiling water, ensuring that the bottom of the bowl does not touch the water, to avoid burning the chocolate. This process is called a double boiler and ensures a gentle melting without the risk of altering the flavors.

When the chocolate has completely melted and becomes glossy, it is time to add the butter. The butter, cut into small cubes, will incorporate more easily into the chocolate. Using a spatula or a whisk, we mix vigorously to achieve a smooth and creamy composition. It is important to ensure that the butter is completely melted and well integrated into the chocolate. Now, we introduce another essential ingredient: the egg yolks. These will add a rich flavor and a velvety texture to our preparation.

We add the yolks one at a time, continuously mixing to avoid coagulation. This will transform the mixture into a creamy and delicious one. After all the yolks have been incorporated, we will obtain a composition of an intense color and an inviting aroma. If we want to bring an extra flavor, now is the perfect time to add vanilla essence or a pinch of salt, which will enhance the taste of the chocolate.

After achieving a homogeneous mass, we let the mixture cool slightly before pouring it into a baking tray lined with parchment paper. It is important to ensure that the tray is properly prepared so that our dessert does not stick. Once we have poured the composition, we level the surface with a spatula to achieve an even appearance. We place the tray in the preheated oven at 180 degrees Celsius and let it bake for about 25-30 minutes, until the surface becomes slightly firm, but the center remains a little soft.

Finally, we let the dessert cool completely before cutting it into portions. It can be served plain, or with a scoop of whipped cream or ice cream, to add a delicious contrast. This recipe is perfect for any occasion, offering a perfect balance between rich chocolate and a velvety texture that will delight any sweet lover. Enjoy every bite!
