Biscuits (Egg-Free)

To prepare these delicious cookies, we start by preheating the oven to a temperature of 175 degrees Celsius. It is essential to strictly adhere to this temperature, as too much heat can lead to excessive flattening of the cookies during baking, and we want fluffy and aromatic cookies. Once the oven is ready, we take a large baking tray and line it with parchment paper, ensuring it is evenly covered to facilitate the removal of the cookies after baking. In a generous bowl, we combine white flour with corn flour, mixing them well so that the ingredients integrate perfectly. This mixture will give the cookies a unique texture, crispy on the outside and soft on the inside. In another bowl, we mix the soft butter with powdered sugar until we achieve a creamy and homogeneous composition that melts in the mouth. It is time to gradually add the flour mixture to the butter and sugar cream, using a mixer to ensure good integration. Once the ingredients are well incorporated, we add vanilla essence, which will give the cookies an irresistible aroma. If the dough seems a little too dry, we can optionally add one or two teaspoons of milk, but this step is optional, depending on the desired consistency. To maintain the shape of the cookies during baking, it is recommended to let the dough chill in the refrigerator for about 15 minutes before using it. If you are short on time, you can skip this step. Using a piping bag, we shape various forms of cookies on the parchment paper, taking care to leave enough space between each shape, as the cookies will spread a little during baking. The cookies bake in the preheated oven for 12-15 minutes or until the edges turn golden, and the inviting smell of vanilla and butter will invade our senses. After taking them out of the oven, we let the cookies cool slightly in the tray to firm up, then transfer them to a wire rack, where they will cool completely, ready to be enjoyed alongside a cup of tea or coffee.
