To create a delicious and comforting dessert, start by preparing the necessary ingredients. In a large bowl, add the softened butter along with the sugar. Use a spatula or an electric mixer to combine these two ingredients until you achieve a fluffy and smooth cream with a fine texture. This step is essential, as the air incorporated into the butter will help the mixture rise during baking.
Once you have a well-mixed composition, add the two egg yolks, making sure to incorporate them well. Then, add a few tablespoons of sour cream, which will provide moisture and a rich flavor. Next, add the flavors – vanilla essence, grated lemon and orange zest, and a pinch of cinnamon and cloves. Next, prepare the bananas. Choose ripe bananas, but not too soft, which you can mash with a fork. Add them to the bowl with the butter and sugar mixture, mixing well to ensure they are evenly integrated. After you have achieved a homogeneous mixture, take a sieve and sift the flour, previously mixed with baking soda (if you decide to use it) and salt. This step will ensure the flour is aerated and will prevent lumps from forming.
Mix the flour well into the wet composition until you no longer see traces of flour. Finally, add the nuts, hazelnuts, or almonds, all coarsely ground or chopped, depending on your preferences. These will add a crunchy texture and rich flavor.
Separately, beat the two egg whites until they form stiff peaks, then carefully fold them into the above mixture using a spatula and gently mixing to avoid breaking the foam. This will make the cake fluffy and airy.
Pour the entire resulting mixture into a cake pan lined with parchment paper or greased with butter. Place the pan in the preheated oven at an appropriate temperature and let it bake for about 30-40 minutes. Check if it is done by inserting a toothpick in the center; if it comes out clean, the cake is perfectly baked.
After baking, let the cake cool in the pan for about 15 minutes, then carefully remove it to a wire rack to cool completely. When it is cool, cut the cake into thin slices, which you can elegantly arrange on a long platter.
