Desert - Apple Roll with Mascarpone and Chocolate by Sofia M. - Recipia
To prepare a delicious apple and chocolate roll, start by preparing the apples. Place them in a saucepan along with the citrus juice, butter, ground spices, and sugar. Let them cook over medium-low heat, stirring occasionally, until they become soft and the flavors combine harmoniously. Adjust the amount of sugar or spices according to your preferences, ensuring that you achieve a balanced sweetness that complements the acidity of the citrus.

While the apples are cooking, prepare the rest of the ingredients. In a clean bowl, beat the egg whites with the 50 g of sugar using an electric mixer until the mixture becomes firm and forms stiff peaks, meaning the egg whites stay on the whisk. In another bowl, beat the egg yolks with the remaining sugar until you obtain a thin, homogeneous cream. Add a pinch of salt, vanilla extract, and sour cream to the yolks, mixing well.

Once the ingredients are well combined, integrate the flour, cocoa powder, baking powder, and orange zest, gently mixing to avoid lumps. Once the mixture is uniform, pour it over the beaten egg whites and gently fold in with a spatula to keep the batter airy. This step is essential for obtaining a fluffy and easy-to-roll cake.

Preheat the oven to 180°C (gas mark 4) and prepare a tray of about 40 cm x 30 cm, lining it with baking paper. Pour the obtained batter into the tray and spread it evenly. Bake for 13-14 minutes, or until the top is lightly golden and elastic to the touch. Prepare a clean towel on a flat surface, and when the cake is ready, carefully turn it onto the towel, peeling off the baking paper. Roll the cake using the towel as a guide and let it cool for 15-20 minutes.

After the cake has cooled, carefully unroll it and transfer it onto a piece of cling film. Make sure the side that had the baking paper is facing up. When the apples are completely cooled, spread a generous layer of mascarpone cheese over the surface of the cake and add the apples on top. Carefully roll it up, taking care not to ruin the shape of the roll, and set it aside to stabilize.

To prepare the chocolate sauce, place the chocolate and cream over a double boiler. Stir constantly until the chocolate is completely melted and combines with the cream, forming a creamy and glossy sauce. Once you have achieved a homogeneous consistency, remove the pot from the heat and continue to stir to cool the mixture slightly. Now, spread the sauce evenly over the apple roll, covering both the surface and the edges. Let the roll cool slightly, then place it in the refrigerator, where the chocolate will begin to set.

If you prefer a sweeter note, you can add a little honey or unrefined sugar to the chocolate sauce, depending on your personal preferences. This roll not only looks spectacular but also combines rich flavors of apples, chocolate, and vanilla, making it a perfect dessert for any occasion. Enjoy it with your loved ones!
