Desert - Almond cake by Nadia E. - Recipia
To prepare a delicious fruit cake, we start by ensuring that all the ingredients are at room temperature to achieve an optimal texture. In a large bowl, the egg whites are beaten until frothy. It is important to use an electric mixer to achieve a light, airy foam that holds well. Gradually add the sugar, one tablespoon at a time, continuing to mix until the foam becomes firm and shiny. This process will take a few minutes, but patience is key to achieving a fluffy cake.

Once the egg whites are perfectly beaten, it is time to add the fruits. You can use a combination of fresh or frozen fruits, such as raspberries, blueberries, or pieces of peaches, which will add a sweet-tart note. If you opt for dried fruits, such as raisins or apricots, make sure to chop them into small pieces for even distribution in the batter. After adding the fruits, carefully fold in the flour and grated lemon zest using a spatula to preserve the air from the egg whites.

Gently mix from top to bottom, being careful not to deflate the foam. This is an essential step, as it will determine the final texture of the cake. Once the ingredients are well combined, grease a loaf pan with butter and sprinkle flour to prevent sticking. Carefully pour the mixture into the pan, ensuring it is evenly distributed.

Preheat the oven to a medium temperature, approximately 180 degrees Celsius. Bake the cake for 30-40 minutes, or until a toothpick inserted in the center comes out clean. It is important not to open the oven door in the first 20 minutes of baking to allow the cake to rise evenly. Once the cake is baked, let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. This recipe will not only fill the house with a wonderful aroma, but it will also provide a delicious dessert, perfect for an afternoon snack or a special occasion. Serve it plain or with a dollop of cream for added flavor.
