White bean zacusca, a Romanian bean spread, needs to cook until the oil rises to the surface; otherwise it stays too runny. First, the onions and peppers are gently cooked, then mixed with the cooked, mashed beans, and the jars spend an hour in the oven in a pan of water. I make sure the beans are soft all the way through, not just easy to squash on the outside. Prep: 45 minutes. Cook: 315 minutes. Rest: 15 minutes. Total time: 375 minutes. Servings: 40. Approximately 400 kcal and 13 g protein per serving.

Ingredients

  • 2 kg dried white beans
  • 6000 ml water for boiling the beans
  • 3 kg onions
  • 800 ml oil
  • 4 kg sweet peppers
  • gogosari and kapia
  • 750 ml tomato passata
  • 4 bay leaves
  • 1 teaspoon whole black peppercorns
  • 60 g coarse salt
  • 1500 ml hot water for the pan

Preparation

1. Sort and rinse the beans. Put them on to boil in 6000 ml of water for 120 minutes, until the beans are soft. Drain off the remaining water, leave the beans to cool for 15 minutes, then mash them in a food processor. 2. Peel and rinse the onions, then chop them in a food processor. Heat 800 ml of oil in a large pot, add the onions and cook gently for 15 minutes, stirring from time to time. 3. Remove the seeds from the peppers, rinse them and chop them in a food processor. Add them to the onions and cook everything gently for 30 minutes, until the peppers soften. 4. Add the tomato passata, mashed beans, bay leaves, pepper and salt to the pot. Cook the mixture for 90 minutes, stirring often, until the oil rises to the surface. Towards the end of cooking, heat the oven to 160°C. 5. Spoon the hot zacusca into 400 g jars and put on the lids. Set the jars in a pan with 1500 ml of hot water and leave them in the oven for 60 minutes. 6. Leave the jars to cool in the oven or covered with blankets, then store them.

Notes

I serve it on toast. You can combine the three kinds of peppers in any proportions, keeping the total amount at 4 kg. Older beans may take longer to cook; if they are still firm, cook them for another 15 minutes at a time and check again. I use a large pot because the mixture fills it, and it is easier to stir without splashing over the sides. If the water in the pan gets low, top it up with hot water, not cold. Once cool, store the jars somewhere cool and out of the light; after opening, keep the jar in the fridge and use it within 3 days.

Can you use canned beans?

Yes. Replace the dried beans with about 4500 g of cooked, drained beans, then mash them and add them to the pot.

Do the beans need to be soaked before boiling?

It is not essential, but you can leave them in cold water for 8-12 hours. Drain the soaking water and boil the beans in the 6000 ml of fresh water.

Can I replace the tomato passata with passata?

Yes, use 750 ml of passata, the same amount as the tomato passata.

Why is the zacusca too runny?

Cook it for another 15 minutes at a time, stirring until the oil rises to the surface; if the vegetables have released a lot of water, it may take longer.
