Do you remember those warm summer days when the aroma of fresh strawberries filled your home? This strawberry jam recipe will not only bring back pleasant memories but will also turn each jar into a moment of indulgence. A simple and natural recipe that contains no preservatives and offers you both delicious jam and syrup.

A brief history of the recipe

Fruit preservation is an ancient tradition that dates back to ancient times, and the strawberry jam recipe you will discover today has its origins in the 1920s when Emil Frederic developed an ingenious preservation technique. This method combines sugar with the natural flavors of strawberries, creating a delicious and versatile product.

Ingredients

- 2 kg fresh strawberries
- 1.4 kg sugar (1.2 kg + 200 g)
- 1 vanilla pod (optional but recommended)
- Juice from 1.5 lemons

Necessary utensils

- Large pot
- Spatula or paddle
- Clean and sterilized jars
- Towel
- Bottle for syrup

Steps for preparation

1. Preparing the strawberries:
- Carefully wash the strawberries under a stream of cold water.
- Remove the stems, being careful not to damage their shape.

2. Layering the ingredients:
- In a large pot, start layering alternate layers.
- Add a first layer of sugar (about 400 g), followed by a layer of strawberries.
- Drizzle with lemon juice to enhance the flavors.
- Continue alternating layers of sugar and strawberries, finishing with a final layer of sugar. Make sure the fruit is well covered.

3. Letting it macerate:
- Cover the pot with a clean towel and let it sit at room temperature for a few hours (ideally until evening if you start in the morning).
- This process will allow the strawberries to release their juice, forming a natural syrup.

4. Boiling the jam:
- The next day, when the strawberries have released a lot of syrup, place the pot on the stove over high heat.
- Do not take your eyes off the pot; bring to a boil, letting it boil for 2 minutes.
- After that, turn off the heat and carefully remove the strawberries into a bowl using a spatula.

5. Preparing the syrup:
- In the remaining syrup, add 200 g of sugar and let it boil until it starts to form large bubbles on the surface (skim off impurities).
- If desired, add the seeds and vanilla pod, as well as a few slices of lemon for extra flavor. Don't forget to remove them at the end.

6. Dividing the syrup:
- Divide the syrup in two. One part is poured over the strawberries, covering them well, and let it boil together.

7. Stewing and preserving:
- Distribute the strawberries and syrup into sterilized jars, ensuring they are not too crowded.
- Place the lid on and turn the jars upside down for a few minutes - this process will help remove air bubbles.
- Cover them with a blanket and let them cool completely before storing them in the pantry.

8. Preparing the syrup:
- The other part of the syrup should be boiled until it becomes thick, then poured into cleaned and sterilized bottles.

Useful tips

- Choose quality strawberries: Buy ripe fruits with a rich aroma. The sweeter the strawberries, the better the jam will be.
- Be careful with sugar: Sugar not only sweetens but also helps with preservation. Make sure to adhere to the indicated quantities.
- Optional flavors: You can experiment with flavors by adding mint leaves, star anise, or even a splash of orange liqueur for a unique touch.

Nutritional benefits

Strawberries are rich in vitamin C, antioxidants, and fiber. This jam will not only delight your taste buds but will also add nutrients to your diet. Consuming it in moderation can add a touch of natural sweetness to your days.
