Mini chocolate tarts

Mini chocolate tarts have a golden biscuit base and a milk chocolate cream set with gelatin. The small portions are baked in tartlet tins or muffin cases, then chilled until the cream is firm. I grind the cookies to a fine powder, with no large pieces. Prep: 30 minutes. Cook: 12-17 minutes. Rest: 1 hour 15 minutes-2 hours 15 minutes. Total time: 1 hour 57 minutes-3 hours 2 minutes. Servings: 8. Approximately 730 kcal and 7 g protein per serving.
Ingredients
- 400 g cookies
- 180 g butter
For the chocolate cream
- 200 g milk chocolate
- 80 g sugar
- 1 teaspoon rum extract
- 200 ml cooking cream
- 100 g butter
- 10 g gelatin
- 50 ml cold water
For decorating
- 150 g strawberries
Preparation
1. Heat the oven to 180°C. Grind the cookies in a food processor until you have a fine powder. 2. Melt 180 g butter in a small saucepan and mix it with the cookies. Press the mixture into 4 mini tart tins with removable bases and 4 muffin cases set in a cupcake pan. Bake for 5-10 minutes, until lightly golden. 3. Break the chocolate into pieces and melt it over a bain-marie for about 5 minutes, until smooth. Add the sugar and rum extract, then stir until the sugar dissolves. 4. Heat the cream in a small saucepan for 2 minutes, until it starts to steam. Pour it over the chocolate, add 100 g butter and whisk well. Take the saucepan off the heat and leave the cream for 5 minutes. 5. Soak the gelatin in 50 ml cold water according to the package instructions, then melt it in the microwave for 10 seconds. Whisk it into the chocolate cream and leave the mixture to cool for another 10 minutes. 6. Pour the cream into the tart tins and muffin cases. Refrigerate for 1-2 hours, until the cream sets, then decorate with strawberries.
Notes
Keep covered in the fridge for up to 3 days, or make them a day ahead. For a gluten-free version, choose certified cookies; the dessert contains dairy. I also tried a tart without gelatin: after 4 hours in the fridge, the cream was soft, so I plan to make them a few hours before the meal. I serve them with fresh strawberries and black tea. The basic version is Alex's, from Bucătăraș; the food processor grinds the cookies evenly, and if the chocolate is very sweet, I stop at 80 g sugar.
Frequently asked questions
Can you use dark chocolate?
Yes, choose one with about 50% cocoa; the cream will be less sweet than with milk chocolate.
Why is the cream still soft?
If it hasn't set properly, leave it in the fridge for another 30 minutes before taking it out of the tins.
When should you take the mini tarts out of the fridge to serve?
Take them out 10 minutes beforehand, so the cream softens a little and they're easier to eat.
