Bunny spinach tart

Ingredients
For the pastry
- 100 g butter
- 200 g flour
- 1 egg
- 90 ml water
- 1/8 teaspoon salt
For the filling
- 500 g cottage cheese
- 200 g spinach
- 4 eggs
- 1/2 teaspoon salt
- 1/8 teaspoon ground pepper
- 1/8 teaspoon nutmeg
- 1 egg
For the pan
- 1 teaspoon oil
- 1 tablespoon flour
Preparation
1. Put 200 g of flour and 1/8 teaspoon of salt in a bowl. Add the melted butter, egg and 90 ml of water, then knead for about 10 minutes, until you have a smooth dough. 2. Cover the dough and chill it for at least 30 minutes. 3. Blend the cottage cheese with the spinach. Add 4 beaten eggs, 1/2 teaspoon of salt, 1/8 teaspoon of ground pepper and 1/8 teaspoon of nutmeg; mix for about 5 minutes, until smooth. 4. Heat the oven to 180°C. Grease the pan with 1 teaspoon of oil and dust it with 1 tablespoon of flour. Roll the dough out into a thin sheet and place it in the pan. 5. Pour the filling into the pan, place the bunny-shaped cutter in the middle and put the fifth egg inside it. Bake for about 50 minutes, until the tart is golden and the egg white has set.
Notes
I made it for my daughter years ago, and she loved how it turned out. It keeps covered in the fridge for up to 3 days; it contains gluten, dairy and eggs. Drain very wet cottage cheese, and thaw and squeeze frozen spinach well before mixing it in. As a savory slice, it is reminiscent of a cheese pie. I cut it into small slices and serve it with green salad.

What should I do if the dough cracks when I roll it out?
Press the cracks together with your fingers; if the dough seems stiff, leave it on the counter for another 5 minutes before rolling it out.

Roll it out to about 3 mm; a thicker sheet may need more time in the oven.
What should I do if the egg white is still soft at the end?
Leave the pan in the oven for another 7 minutes at 180°C, until the egg white is no longer translucent.
