Vegetable Meatballs with Tomato Sauce and Buckwheat Spaghetti

To prepare a savory dish, start by gathering all the necessary ingredients. You will need a large onion, a bell pepper, a few cloves of garlic, and a teaspoon of dried thyme. These ingredients will form the base of the flavors for your meatballs. First, peel the onion, pepper, and garlic. Cut the onion into quarters, the pepper into large pieces, and leave the garlic whole to preserve its aroma. Place all these ingredients in a blender and mix until you get a smooth paste. In a large bowl, add the minced meat, which can be pork, beef, or a combination of both, depending on your preferences. Pour the vegetable paste over the meat and season with salt and pepper to taste. Mix well, using your hands or a spatula, to integrate all the ingredients. Now, form the meatballs to your desired size. You can opt for smaller meatballs, ideal for appetizers, or larger ones, suitable for a main course. In a deep pan, add a little oil and let it heat up. Carefully place the meatballs in the pan and fry them until golden on all sides, then remove them to a platter and set aside. Now, in the same pan, pour a splash of coconut oil and caramelize the onion, stirring constantly. While the meatballs are cooking, bring salted water to a boil in another pot and add the spaghetti according to the package instructions. When they are al dente, drain them and reserve a little of the cooking water. Finally, add chopped fresh basil to the sauce with meatballs and mix well. Serve the meatballs alongside the spaghetti, and for a special touch, you can garnish with green basil leaves. This dish will surely impress anyone, being a delicious combination of flavors!
