Grilled beef burgers

Grilled beef burgers stay flat on the grill at a picnic thanks to the indent made with a finger in the middle of each patty. The beef with egg, mustard, barbecue sauce and onion browns over the fire, while the special sauce brings together sun-dried tomatoes, ginger, curry and jalapeño, with heat and a tangy flavor. I go for medium-ground beef, not a fine paste. Preparation: 20 minutes. Cooking: 17-21 minutes. Total time: 37-41 minutes. Serves: 4. Approximately 530 kcal and 32 g protein per serving.
Ingredients
For the patties
- 1 egg
- 1 teaspoon mustard
- 1 teaspoon barbecue sauce
- 1 small onion (100 g)
- 1 garlic clove
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 500 g ground beef
For the sauce
- 1 teaspoon salad cream
- 1 tablespoon sun-dried tomatoes
- 1 tablespoon sour cream or yogurt
- 1 tablespoon grated lemon or lime zest
- 1 tablespoon grated ginger
- 1 tablespoon ketchup
- 1 teaspoon curry powder
- 1 teaspoon dried oregano
- 1 teaspoon sesame oil
- 1 fresh jalapeño pepper
For grilling and serving
- 1 teaspoon oil
- 4 burger buns
Preparation
1. Put the egg in a bowl and mix it with the mustard, barbecue sauce, finely chopped onion, garlic, salt and pepper. Add the beef and mix just until combined; divide the mixture into 4 patties and make a shallow indent in the middle of each one. 2. In a small bowl, mix the salad cream, chopped sun-dried tomatoes, sour cream or yogurt, grated lemon or lime zest, ginger, ketchup, curry powder, oregano and chopped jalapeño. 3. Brush the grill with 1 teaspoon of oil and heat it over medium heat for 5 minutes. When the grate is hot, the patty should sizzle as it touches it. 4. Put the patties on the grill and cook them for 6-8 minutes on each side, until browned and firm. Place them in buns, spoon the sauce over the top and add your favorite toppings.
Notes
I put them in buns with lettuce and sliced tomatoes. I choose ground beef with a little fat that has not been frozen; it loses its juices after thawing. Thicker patties need the time at the upper end of the range. You can replace the oregano with the same amount of thyme or rosemary; egg and sesame are allergens, and the sauce contains dairy if you choose sour cream. Raw patties, covered and refrigerated, keep for no more than one day before grilling.
