Sponge 1.1. Separate the eggs. Beat the egg whites until stiff, then gradually add the sugar and continue mixing until a glossy meringue forms. 1.2. Gently fold in the egg yolks using a spatula. 1.3. Sift the flour with the cocoa and gradually add it to the meringue, mixing slowly from the bottom up to avoid deflating the mixture. 1.4. Pour the batter into a cake pan lined with parchment paper and bake in a preheated oven at 180°C for about 30-35 minutes, or until a toothpick comes out clean. 1.5. Place the base in the preheated oven until it passes the toothpick test and let it cool. Cream: Soak the gelatin in 50 ml of sweet milk. Mix the condensed milk with honey and the rest of the sweet milk. Once the gelatin has soaked, place it over a steam bath until it becomes liquid. Combine the gelatin with the condensed milk mixture and refrigerate for at least an hour until it thickens like pudding. Whip the cream and mix it with the condensed milk cream. Cut the base into 3, soak with the syrup made by caramelizing the sugar, adding the milk, and letting it melt before removing from heat. Add the cappuccino packet. Soak each layer and assemble: layer/base, half the cream, layer/other half, layer. On top, I added whipped cream mixed with Krantz. Whip the cream well and add the Krantz made from caramelized sugar mixed with nuts. Let it cool, then break into small pieces and put in the food processor. I added chocolate leaves for decoration.
