This ham and cheese roll is served cold as an Easter appetizer, sliced after a few hours in the fridge. The soft cheese is rolled out into a sheet and wrapped around cream cheese with herbs, red pepper and ham. The first time I tried it, I was sure it wouldn’t work, and I didn’t even take photos; I roll the cheese while it’s flexible, before it sticks to the rolling pin. Preparation: 15 minutes. Cooking: 22 minutes. Resting: 180 minutes. Total time: 217 minutes. Servings: 6. About 320 kcal and 17 g protein per serving.

Ingredients

  • 2000 ml water
  • 300 g semi-hard cheese
  • 200 g cream cheese
  • 10 g parsley
  • 50 g red bell pepper
  • 6 slices of ham

Preparation

1. Pour 2000 ml of water into a large pot and bring it to a boil in about 10 minutes. 2. Put the 300 g of cheese in its heat-sealed packaging, if it is suitable for boiling. Leave it in the gently boiling water for 12 minutes, until the piece gives when pressed. 3. Lay plastic wrap on the work surface. Take the cheese out of the packaging and roll it out with a rolling pin into a sheet. 4. Mix the 200 g of cream cheese with 10 g of chopped parsley and 50 g of finely diced red bell pepper. Spread the mixture over the cheese, place 6 slices of ham on top and roll it up tightly. 5. Cover the roll and leave it in the fridge for 3 hours, then slice it.

Notes

Serve the slices alongside olives and raw vegetables on a chilled platter. Choose semi-hard cheese in sealed packaging that can be heated in water; very mature cheese is harder to roll out and may crack. If the piece is thick, it may need a few extra minutes, until it gives when pressed through the packaging. The cream cheese should be spreadable, not runny; if there is whey on the surface, drain it before mixing. Yellow bell pepper can replace the red pepper in the same quantity, and you can use turkey ham, also 6 slices. I’d make the roll a few hours before arranging the platter, so it’s cold when I slice it. Keep it covered in the fridge and eat it within 3 days.
