Vegetable flatbread

The vegetable flatbread is filled with fried potatoes and sautéed mushrooms; warm each flatbread for a few seconds on each side. The tomato, white radish and olives stay raw, and the fasting flatbread with potatoes and mushrooms is rolled while still flexible. I put the olives near the edge so I get some in every bite. Preparation: 20 minutes. Cooking: 25 minutes. Total time: 45 minutes. Serves: 4. About 460 kcal and 10 g protein per serving.
Ingredients
- 4 flatbreads
- 2 large potatoes
- 45 ml oil
- 7 button mushrooms (140 g)
- 15 ml oil
- 1/2 teaspoon salt
- 1/4 teaspoon ground pepper
- 1 large tomato
- 1 white radish (100 g)
- 50 g sliced black olives
- 4 lettuce leaves
Preparation
1. Peel the potatoes and slice them. Fry them in 45 ml of oil over medium heat for about 15 minutes, turning them now and then, until browned and tender. 2. Clean the mushrooms, slice them and put them in a clean pan with 15 ml of oil. Add the salt and pepper and cook for about 8 minutes, until the liquid has evaporated. 3. Wash the tomato and radish and slice them. Wash the lettuce leaves, drain them well and pat them dry with paper towels. Drain the sliced olives. 4. Heat a dry pan and warm each flatbread for 15 seconds on each side, about 2 minutes in total for all four. 5. Place a lettuce leaf on each flatbread, then divide the potatoes, mushrooms, tomato, radish and olives among them. Roll up the flatbreads.
Notes
Store the components separately in the fridge for up to 3 days; warm the flatbreads and fill them just before serving. Cut the potatoes into thin slices of similar thickness, since the thicker ones stay firm by the time the thin ones have browned. Small button mushrooms are quick to slice; if the pan is crowded, the water takes longer to evaporate, so wait until you can no longer see liquid at the bottom. Olives can be salty: taste them first and rinse them if the brine is strong. For those who don't fast, you can add 120 g of cooked meat, finely chopped; wheat flatbreads contain gluten. I serve them with my favorite sauce on the side.

Which potatoes work best in the filling?
Floury potatoes work well; after taking them out of the pan, leave them on paper towels for 2 minutes before adding them to the flatbread.
Can I replace the white radish with red radishes?
Yes, use 4 small red radishes, about 100 g in total, and slice them thinly.
Why does the flatbread crack when I roll it?
If it has cooled and stiffened, warm it for 10 seconds on each side in a dry pan and roll it up straight away.
Can I use oyster mushrooms too?
Yes. Cut 150 g of oyster mushrooms into thin strips and cook them for 7 minutes, until they no longer release liquid.
