Smoking Meat at Home

Diverse - Smoking Meat at Home by Leana D. - Recipia

I have long wanted to share with you this simple and ingenious method of smoking meat in your kitchens, without smoking yourselves or the walls. With the upcoming holidays, it is the perfect time to show you how to prepare smoked delights at home. Unfortunately, not everyone has a smoker at hand, and those made by your own hands are truly twice as blessed. So, let's see how I do it. This recipe can be applied to different types of meat, such as pork cuts, sausages, chicken breasts, fish, or even cheese. You can also smoke salt, which will give a special flavor to your dishes. The process is extremely simple and does not require sophisticated equipment. The important thing is to have a thick-bottomed pot with a tight lid. I will use a cauldron, but any other pot that can be sealed works wonderfully. First, you need to prepare the meat. Proper marinating is essential to achieve an intense flavor. For example, for pork, mix salt, pepper, paprika, and garlic. Chicken can be brushed with yogurt, chili flakes, or lemon juice for a fresher taste. Fish, on the other hand, can be simply marinated with just salt and lemon juice. Let the meat marinate overnight to absorb all the flavors. After you have prepared the meat, it is time to prepare the cauldron. Cover it with aluminum foil, leaving enough material to seal the edges. Then, add the "sawdust" that will smolder: a handful of rice and a tablespoon of sugar are the basic ingredients. Depending on the type of meat, you can add different flavors: for chicken, try black tea, cherry twigs, or dried cherry leaves; for pork, add a few coriander seeds and juniper; and for beef, tea bags with floral flavors, or even basil leaves. Your imagination is the only limit! After you have prepared the sawdust, place a grill inside the cauldron, so that the meat is at an even distance between the bottom of the pot and the lid. Place the meat, slightly drained from the marinade it was in, cover with the tight lid, and put the cauldron on high heat for the first 15 minutes, then reduce the flame to medium. You will notice how the aroma will spread throughout the kitchen without leaving smoke. Cooking times are variable: chicken is smoked and cooked in about 30 minutes, pork in 45 minutes, and beef may take longer, depending on personal preferences. Fish is ready in a quarter of an hour. With what you get, you can enjoy it immediately or freeze it for future days. This smoking method offers juicy, flavorful, and visually pleasing meat that cannot be compared to anything else. The cauldron remains clean, and cleaning is done simply by removing the foil with the burnt remains. So, do not hesitate to try this recipe, as you will not regret it for a moment!
