We start this delicious recipe by preparing the meat. We take a large pan and add a tablespoon of oil, which we heat over medium heat. Once the oil is hot, we add the pieces of meat, making sure they are evenly placed in the pan. We let them fry until they become slightly golden and white on all sides. This will create a savory crust that will add a lot of flavor to our dish. After the meat is browned, we pour the beef broth over it. It is important that the broth is hot to not stop the cooking process. We cover the pan with a lid and let the meat simmer on low heat for about 40-50 minutes, or until it becomes tender. If we notice that the liquid reduces too much, we can add a little water, making sure that in the end, there is enough juice left to bind the dish. When the meat is ready, we set it aside and sprinkle a few tablespoons of flour over it, mixing well to obtain a uniform composition. Next, we add a tablespoon of mustard, which will provide a slightly spicy taste and enrich the dish. Now, we gradually pour in the milk, stirring continuously to prevent lumps from forming. We let everything simmer on low heat for about 5 minutes, until the sauce becomes creamy and well bound. Finally, we salt and pepper to taste. Meanwhile, in another pan, we heat olive oil. We peel the carrot and celery, then cut them into small cubes. We add the vegetables to the pan, cover with a lid, and let them cook, stirring occasionally to prevent sticking. They should become slightly browned and retain their crunchy texture. For serving, we prepare to place the meat on a platter, alongside a bed of al dente pasta and sautéed vegetables.
