It is important to taste the mayonnaise and adjust the ingredients according to personal preferences; thus, you can add more salt, lemon juice, or mustard, depending on how you want its flavor to be, whether saltier, more sour, or even spicy. For preparing the meat, choose a piece of pork neck or chop and cut it into medium-thick slices. Use a meat mallet to pound the meat so that it becomes tender and easy to cook. If you opt for pork leg, do not forget to score the edges of each slice about two fingers apart, to prevent them from curling during baking. Place the pieces of meat in a heat-resistant dish, previously greased with a little oil. Sprinkle a mixture of salt, pepper, paprika, and, if desired, thyme, to give them a flavorful taste. After seasoning the meat, evenly distribute the mayonnaise over it. Next, add a mixture of onion, bell pepper, and green onion, which will add extra flavor and freshness to the dish. Preheat the oven to 200 degrees Celsius and place the dish with the meat inside, allowing it to bake for about 40-50 minutes. In the last 20 minutes of cooking, sprinkle grated cheese on top, which will melt and brown, creating a delicious crust.
