Polpo alla Luciana, stuffed octopus

Polpo alla Luciana, a stuffed octopus dish, comes from Santa Lucia, once a fishing village and now a neighborhood in Naples; octopuses stuffed with olives and capers simmer in tomato sauce. I laughed in surprise the first time the tentacles started moving and turning red in the pan; now I watch them curl up before adding the tomato sauce. Prep: 20 minutes. Cook: 25 minutes. Rest: 30 minutes. Total time: 75 minutes. Serves: 2. About 550 kcal and 40 g protein per serving.
Ingredients
- 500 g frozen baby octopus
- 10 g parsley
- 50 g olives
- 1/2 tablespoon capers in vinegar
- 2 stalks green garlic
- 1/4 teaspoon salt
- 4 tablespoons olive oil
- 1 red chili
- 50 g olives
- 1/2 tablespoon capers in vinegar
- 2 stalks green garlic
- 3/4 teaspoon salt
- 1/2 teaspoon pepper
- 200 g tomato passata
- 5 g parsley
Preparation
1. Thaw the octopuses in a tightly sealed bag in cold water for 30 minutes. Rinse them quickly and pat dry with paper towels. 2. Chop the parsley and 2 stalks of green garlic. Mix 10 g of parsley with 50 g of chopped olives, 1/2 tablespoon of drained capers, 2 chopped stalks of green garlic and 1/4 teaspoon of salt. 3. Stuff the octopuses’ sacs with the mixture and secure the opening of each one with a toothpick. 4. Heat 4 tablespoons of olive oil in a pan. Fry the octopuses for 5 minutes, until they turn red, then add the sliced chili, 3/4 teaspoon of salt, 1/2 teaspoon of pepper, 50 g of olives, 1/2 tablespoon of capers and 2 chopped stalks of green garlic. Simmer over low heat for 15 minutes, until they start to soften. 5. Add the tomato passata and simmer for another 5 minutes, until the sauce thickens. Remove the toothpicks and sprinkle with the remaining parsley.
Notes
Contains mollusks; with rice or pasta, the sauce clings to the side, and the dish is more like a quick stew than a pasta sauce. Keeps in the fridge in a sealed container for up to 3 days. Choose small octopuses that are similar in size so some don’t cook faster than others. Capers in vinegar can vary in saltiness, so taste them before adjusting the salt. Sometimes the filling comes out of the sacs if the toothpick doesn’t hold the opening closed.
Frequently asked questions
Can I replace the capers with something else?
Use 1 tablespoon of chopped olives and 1 teaspoon of wine vinegar instead. The vinegar keeps the tangy flavor.
What should I do if it’s still tough after cooking?
Let it simmer in the sauce for another 10 minutes over low heat, then check a piece. Octopuses can have different cooking times.
Can I use fresh tomatoes instead of passata?
Yes, grate 2 ripe tomatoes and drain off the juice before adding them to the pan.
