Pickles - Semi-prepared `Housewife` Type - Stuffed Turnips by Daria O. - Recipia

To prepare this delicious stuffed turnip recipe, start by gathering all the necessary ingredients. You will need olive oil, a large onion, a cup of rice, ground meat (pork or beef, according to preference), fresh herbs (parsley or dill), salt, pepper, and optionally, a little paprika. Additionally, don't forget the turnips, which will serve as the perfect containers for the filling, and the ingredients for the sauce: flour, bone broth, and stock. In a large pot, add the oil and finely chopped onion, which has been carefully washed and peeled. Place the pot over medium heat and sauté the onion, stirring constantly, until it becomes translucent and slightly golden. This process will add flavor and depth to your dish. Once the onion is sautéed, add the rice, mixing well to incorporate it with the onion. Add a little cold water to help the rice cook evenly. Continue to stir to prevent sticking to the bottom of the pot. Once the rice is slightly translucent, remove the pot from the heat and let the mixture cool. Meanwhile, prepare the meat. Take the ground meat and mix it with the fresh herbs, salt, pepper, and if desired, add a little paprika for a more intense flavor. Once the mixture is homogeneous, incorporate the cooled rice into it and mix well, ensuring that each ingredient is evenly distributed. Now, take the turnips and peel them. Wash them well and use a teaspoon or knife to carefully hollow them out, being careful not to break the walls. The flesh obtained from the turnips should not be discarded but set aside to use in the sauce. Using a spoon, fill each turnip with the meat and rice mixture, being careful not to overfill them to allow for expansion during cooking. After all the turnips are filled, place them side by side in a plastic bag. Make sure to portion, label, and date them, then put them in the freezer. These stuffed turnips can be kept for up to 6 months, providing you with a delicious meal on cold winter days. When you are ready to prepare them, take the turnips out of the bag and place them directly in a pot of boiling water. While they are boiling, prepare the sauce. In a pan, add a little oil and flour, mixing well to form a roux. Then, deglaze with the bone broth and add the stock. Season with salt and let the sauce simmer for 30 minutes, stirring occasionally. Once the turnips are cooked, pour the sauce over them and place everything in the oven for 45 minutes. Serve the stuffed turnips with sour cream or yogurt on top, adding a sprinkle of fresh herbs for a special touch. Bon appétit!
