Stuffed Peppers

The peppers are washed carefully to remove any impurities and pesticides. After they have been cleaned, the tops are cut off, being careful not to damage them, as they will be used later. Using a teaspoon, the insides of the peppers are cleaned of seeds and membranes, so that the filling can be easily added. The cut tops are placed in a bowl and set aside to be incorporated into the dish later. After this stage, the vegetables are prepared. The onion is peeled, washed, and finely chopped. A pan is placed on the heat with oil, and when it is well heated, the onion is added, allowing it to sauté until it becomes translucent and fragrant. Meanwhile, half of the pepper, the celery stalk, and the carrots are cleaned, washed, and cut into cubes or slices, depending on preference. These vegetables are added to the pan along with the onion and sautéed for a few moments, stirring occasionally to prevent sticking. Once the vegetables are sautéed, the minced meat is placed on top, mixing well to combine the flavors. The rice is washed under a stream of cold water to remove excess starch, then drained well. It is added to the pan, mixing with the meat and vegetables, allowing everything to sauté together for a few minutes. Salt, pepper, and freshly chopped dill are added to give a perfect flavor to the mixture. 300 ml of water is added and left to boil until the liquid significantly reduces and the rice absorbs the flavors from the meat and vegetables. After the mixture has cooled slightly, the egg whites are added, mixing well to obtain a homogeneous filling. Using a teaspoon, the peppers are filled with this mixture, being careful not to overfill them, and then they are placed upright in a pot with the tops on top. Water is added to the pot, enough to almost completely cover the peppers, and left to boil. They will be ready when they become soft. Meanwhile, the sauce is prepared from tomato sauce, sugar, and a little flour, mixing them well. After the peppers are cooked, the sauce is added, and left on the heat for a few more minutes until the flour is cooked. Finally, the heat is turned off, and the dish is left to cool slightly. The stuffed peppers with meat and rice are served warm, garnished with fresh herbs, and will surely be enjoyed with great appetite! Enjoy your meal!
