Pork roulade with walnuts and bell pepper

At Easter, pork roulade with walnuts and bell pepper is usually served cold, sliced on an appetizer platter alongside the other bites. The filling of toasted walnuts, onion and bell pepper is wrapped in a sheet of pork browned in the oven, and the paprika colors the outside; once cooled, each slice holds its shape. I cut the slices about a finger thick. Prep: 25 minutes. Cook: 102 minutes. Rest: 120 minutes. Total time: 247 minutes. Serves: 3. Approximately 540 kcal and 46 g protein per serving.
Ingredients
- 600 g boneless pork leg
For the filling
- 30 g chopped walnuts
- 1 medium white onion (150 g)
- 1/2 red bell pepper (75 g)
- 1 tablespoon olive oil
- 1 egg
- 1/2 teaspoon salt
- 1/8 teaspoon ground pepper
- 1/2 teaspoon ground nutmeg
- 2 tablespoons breadcrumbs
For brushing the roulade
- 2 tablespoons olive oil
- 1/8 teaspoon ground pepper
- 1/2 teaspoon salt
- 1/2 teaspoon nutmeg
- 1 teaspoon sweet paprika
For the dish
- 1 teaspoon olive oil
Preparation
1. Chop 30 g of walnuts and toast them in a nonstick pan without any fat for 4 minutes, stirring until lightly browned. 2. Finely dice the onion and bell pepper. Sauté them in 1 tablespoon of olive oil for 8 minutes, until softened. 3. Put the walnuts, onion and bell pepper in a bowl. Add the beaten egg, breadcrumbs, 1/2 teaspoon of salt, 1/8 teaspoon of pepper and 1/2 teaspoon of nutmeg. Mix. 4. Pat the pork leg dry with paper towels, open it out into a sheet and pound it with a meat mallet. Spread the filling over the meat, roll it up and tie the roulade with kitchen twine. 5. Mix 2 tablespoons of olive oil with 1/2 teaspoon of salt, 1/8 teaspoon of pepper, 1/2 teaspoon of nutmeg and 1 teaspoon of sweet paprika. Brush the roulade with the mixture. 6. Grease an ovenproof dish with 1 teaspoon of olive oil and place the roulade in it. Cover with a lid and bake in an oven preheated to 180°C for 90 minutes. For the last 20 minutes, remove the lid and baste the roulade with the juices in the dish. The meat should be cooked through. 7. Remove the roulade from the oven and let it cool completely, about 120 minutes, before slicing.
Notes
Serve it with a green salad dressed with vinegar, something fresh alongside the cold slices. For Easter, you can make it the day before and keep it covered in the fridge for up to 3 days. Regular breadcrumbs can be replaced with gluten-free breadcrumbs in the same amount; the filling contains walnuts and egg, and regular breadcrumbs contain gluten. Ask for a wide, boneless piece of pork leg opened out for a roulade, not separate slices. If you choose a piece much thicker than this one, it may need more time in the oven; check that it is cooked through before taking it out. Walnuts darken quickly in the pan (stay nearby), and bitter ones will give the filling the same note. As a cold platter dish, it brings drob to mind, but here the filling is wrapped in meat and the slices are more compact. I took inspiration for it from a recipe by Timea.
Frequently asked questions
How can I stop the filling from coming out at the ends?
Leave a strip of about 2 cm bare at each end before rolling it up, then tie it tightly with twine.
Can I use a kapia pepper instead of bell pepper?
Yes, use half a kapia pepper, finely diced; the filling will have a slightly sweeter flavor.
How thin should I pound the meat?
Try to get it about 1 cm thick, without any areas much thicker than the rest.
Would hazelnuts work instead of walnuts?
Yes, replace the walnuts with 30 g of chopped hazelnuts; toast them until lightly browned, without letting them darken.
Can I use pork neck instead of leg?
Yes, choose 600 g of boneless pork neck and open it out into a sheet before filling it; the layer of fat will be more visible once cooled.
