The dough is the foundation of any pastry recipe, and preparing it can be both a pleasant and satisfying experience. If you want to delight your senses with a flaky and tender dough, I suggest you make it yourself. To start, you will need the following ingredients: 250g of flour, 125ml of water, 5g of salt, and 200g of butter. It is important to use quality butter, as it will significantly contribute to the final texture and flavor of the product.

In a clean bowl, sift the flour to aerate it, then make a well in the center. Here we will add the salt and water. Mix the ingredients with a spatula or your hands until a homogeneous dough is formed. It is essential not to over-knead the dough, as we want to keep the air in the mixture. Once the dough is formed, wrap it in plastic wrap and let it rest in the refrigerator for about 30 minutes. This resting period allows the gluten to relax, resulting in a dough that is easier to work with.

After the resting time has passed, take the dough out of the refrigerator and gently roll it out, being careful to focus on the edges. Place the butter in the center of the dough and, with the help of a rolling pin, begin to incorporate the butter by rolling out the dough. Fold the dough into thirds and roll it out again, repeating this process four times. Each rolling and folding will create layers of butter and dough, essential for achieving a perfect flaky dough.

After the last rolling, wrap the dough in plastic wrap and place it back in the refrigerator for another 30 minutes. At this point, it is important to repeat the rolling and folding process at least 10 times to ensure a dough with well-defined layers. Once we have completed this process, roll out a thin circle and cut triangles, thus preparing for your favorite filling.

Whether you choose cheese, chocolate, or fruit filling, it is essential to distribute them evenly over the triangles. Then, brush them with a little oil to give them a golden and crispy crust.
