Plain boiled potatoes with parsley

Plain boiled potatoes are new potatoes cut into cubes, cooked in cold water with a little oil and tossed with parsley. They come out soft without falling apart, and they taste clean, like potato, with only salt, pepper and parsley on top. I pick small potatoes, about the size of an egg, because they cook evenly in the 25 minutes. Preparation: 15 minutes. Cooking: 25 minutes. Total time: 40 minutes. Servings: 4. About 110 kcal and 3 g protein per serving.
Ingredients
- 500 g new potatoes
- 1500 ml water
- 1 teaspoon oil
- 1/2 teaspoon salt
- 15 g fresh parsley
- 1/4 teaspoon ground pepper
Preparation
1. Wash the new potatoes, peel them and cut them into cubes. 2. Put the potatoes on to boil in 1500 ml cold water, with 1 teaspoon of oil. 3. When the water starts to simmer, add 1/4 teaspoon of salt and let them boil for 25 minutes, until a knife slides easily into the cubes. 4. Drain the potatoes and put them in a bowl. 5. Wash the parsley well under plenty of water, chop it finely and mix it with the potatoes while they are still warm. 6. Add 1/4 teaspoon of salt and 1/4 teaspoon of ground pepper, to taste, and mix. 7. Serve them warm.
Notes
Potatoes go well warm next to fried or baked fish, but also plain, straight from the bowl. They keep in the fridge, covered, for up to 3 days. Since they are only potatoes, oil, salt, pepper and parsley, they are vegan and gluten-free, and dairy-free. They look like the potatoes for beef salad, only here they stay as whole cubes. Larger pieces need more time to boil, so don't take them off the heat once only the edges have softened. If the parsley is still wet after washing, dry it well with kitchen paper before chopping, otherwise the potatoes get soggy. For a richer taste, add 10 g of butter at the end, but then it is no longer vegan. Chop the parsley just before it goes into the bowl so it doesn't wilt.
Frequently asked questions
What potatoes do I use if I can't find new potatoes?
Salad potatoes, with firm flesh, boil the same way in 25 minutes and hold their shape. Floury ones fall apart more easily, so don't use them for this.
What can I use instead of parsley?
Use 10 g fresh dill, finely chopped and mixed in the same way, or 20 g green onion sliced thinly.
Why did the potatoes fall apart while cooking?
Usually they stayed in the water too long. Take them out when a knife slides in easily, even if the full 25 minutes haven't passed.
