To prepare these delicious muffins with yogurt and sausage, we start by organizing all the necessary ingredients. It is important to have a large bowl for the wet mixture and another for the dry ingredients. In the first bowl, we add the fresh yogurt, beaten eggs, olive oil, salt, and grated cheese, which will give the muffins a creamy texture and a rich flavor. We mix these ingredients well with a spatula or whisk until we obtain a homogeneous mixture.

In the second bowl, we combine the flour with the baking powder, ensuring there are no lumps and that the baking powder is well distributed. This step is essential for achieving fluffy muffins. Once both mixtures are ready, we pour the wet ingredient mixture over the flour and mix gently, just until combined, avoiding overmixing to not affect the final texture.

After obtaining a homogeneous dough, we let the mixture rest for about 15 minutes. This resting period allows the ingredients to blend better and will help develop the flavors. In the meantime, we take care of the sausages. We cut them in half, then each half into thin slices, to ensure they will bake evenly in the muffins.

Once the dough has rested, we add half of the sausage slices to the flour mixture and mix gently, so that the slices are evenly distributed. We preheat the oven to a medium temperature. We prepare the muffin tins, either using special papers or greasing the tins with oil to prevent sticking. We fill each mold with about 3/4 of the dough, keeping in mind that the muffins will rise during baking.

On top of each muffin, we place a few remaining sausage slices and some cubes of cheese, which will melt and form a delicious crust. We place the molds in the preheated oven and let them bake until the muffins become golden and browned on top, a clear sign that they are ready. Depending on the oven, this process can take between 20 and 30 minutes, so it is good to check them periodically. After baking, we let the muffins cool slightly in the molds before taking them out and enjoying them warm, accompanied by a fresh salad or yogurt sauce. These muffins are ideal for a hearty breakfast, a quick lunch, or a delicious snack, full of flavors!
