1. Start by preparing the mashed potatoes. Place the diced potatoes in a large pot, add cold water and a teaspoon of salt, then add the bay leaves. Boil the potatoes over medium heat for 15-20 minutes or until tender.

2. Once the potatoes are cooked, drain them well and remove the bay leaves. Use a mixer or whisk to mash the potatoes. Add the butter and warm milk, continuing to mix until you achieve a smooth and creamy mash. Season with salt to taste. Keep the mash warm until serving.

3. While the mash cools, prepare the red sauce. In a skillet, heat 20 ml of milk over low heat, add the chopped onion and garlic. Sauté for 5 minutes until they become soft and translucent.
